Above is a woman by the name of Dani Blackwell. Dani is a teacher at West Albany, and she has taught a couple of my classes. What I did not know is that she started making cakes last fall at LBCC. Although she is still considered a beginner, Dani can make a rather nice looking cake. I joined her moments after taking the cake out of the oven. Her first task was to level the cake (first picture) so that she could evenly stack the two pieces of cake on top of each other. After she leveled the cake, Dani laid down a frosting base so when adding peach filling (second picture), it would not leak. Once the filling was applied Dani added the top half of the cake and covered it with frosting (third picture). After the hard work was over with, Dani put the finishing touches of decoration to complete the peach poppy seed cake. (fourth and fifth picture). Dani commented on the fact that she despised cake at the beginning of her class, but now she has a difficult time not eating it. During their ten week course, the students make one cake a week while learning various techniques. This cake was made on Memorial Day, so a patriotic theme seemed fitting. Although the class is only offered in the fall, Dani stated that she will be taking it again next year.
